Toasted muesli - yippee!

This stuff is so easy it almost makes itself and so delicious everyone will want to eat it, all the time. It’s GF, vegan and waaaay better for you than shop bought toasted muesli. Get amongst it!
 
¼ cup honey
¼ cup olive oil or Nuttlex or other vegan spread
2 ½ cups buckwheat groats
½ cup sunflower seeds (hulled)
2 cups puffed rice

½ cup pepitas
¼ cup chia seeds
¼ cup sesame seeds
½ cup sultanas
½ cup dried fruit of your favourite denomination, chopped finely
 
Melt the honey and the oil in a small saucepan over a low heat. Pour it over all the other dry ingredients (except for the sultanas and the dried fruit) and mix well with your hands. Spread onto a baking paper lined tray and cook for 25 minutes at 150 degrees. Start checking it after 15 mins because burnt muesli is pretty hard on your teeth. Once it’s cooked add the sultanas and fruit. When it’s completely cool, put it into an airtight container. It might keep quite well for a couple of weeks though, who are we kidding here, really? ​
